The Coup

The Coup is the bar and kitchen of BUNKERBUNKER, a Singapore events and placemaking outfit, and it sits underground at 7 Ann Siang Hill. Carved out beneath the historic shophouse row, this low-lit, bunker-styled bar was opened by a former Shopback executive who left the corporate track for natural wine and craft beer, and it describes itself as cosy, intimate and safe.

The rotating taps lean hard into the adventurous end: barrel-aged imperial stouts, nitro pours and stouts finished with smoked plum and smoked salt. Beyond the beer, the bar keeps a wide range of natural wine, sake, specialty spirits and cocktails, so it works for mixed groups. Anyone sitting out the harder stuff is covered by house-made kombucha and other alcohol-free options.

Food is built for sharing: plates of cured meats, cheeses and the kitchen's own pickles and ferments, which suit a slow evening with a few strong beers.

It's one of Ann Siang Hill's more atmospheric late-night stops, a short walk from Maxwell and Telok Ayer MRT stations, but it opens only a few evenings a week, so plan ahead: the bar's own page lists Wednesday to Saturday from 6pm to midnight.
