Fermenteria Seochon is Seoul Gypsy's more experimental sibling to its flagship Jongno hanok brewpub β a fermentation-focused space turning out sour, funky and barrel-aged beers for drinkers who've already worked through the core range elsewhere. The room is bright and casual, with big windows overlooking the Seochon neighbourhood's low-rise streets.
Food leans toward wood-fired sourdough pizza, made to match the beer rather than as an afterthought. It's a smaller, quieter counterpart to the main brewpub β worth seeking out specifically for the fermentation-driven beers you won't find on tap elsewhere.
